Monte Grande: Tangy and even a little sour, this Guatemalan cacao is high in acidity which to some may translate into a faint fermented / vinegar aroma.
Belize, Maya Mountain: Less tangy than Guatemalan cacao, Maya Mountain cacao is bright and delicate in flavor with hints of fruit notes.
Madagascar: Buttery with notes of pineapple.
